Beta-fructosidase or Invertase is an enzyme that catalyses the hydrolysis of sucrose into fructose and glucose (i.e. the breaking down of sugar molecules). Alternative names include saccharase, glucosucrase, beta-h-fructosidase, beta-fructosidase, invertin, sucrase, maxinvert L 1000, fructosylinvertase, alkaline invertase, and acid invertase.
Invertase is produced by various organisms like yeast, fungi, bacteria, higher plants, and animals. In humans, Beta-fructosidase is found in human saliva. It is produced by the bacteria Streptococcus mutans present in dental plaque.
